Danny Boyle, Hobbits and Highland Cows: the Olympic Opening Ceremony

Is Danny Boyle a Frustrated Director?
I know he has directed many glorious award-winning films but, judging from his controversial opening ceremony extravaganza at £27 million quid for a two to three hour bash, I feel he is frustrated that he never ever had a stab at directing 'The Hobbit'. 
Forget about the Teletubbies. The Land of the Hobbits is what Danny Boyle’s 'Green and Pleasant' opening ceremony for the London 2012 Olympic Games reminds me of.  A green, tranquil  and picturesque land that would not have been out of place in a J.R.R. Tolkien  novel.
Maybe I am being pernickety - I thought the 2012 Olympic Games were for the United Kingdom and not just England. Of course I do realise that many English people think of the U.K. as England but surely a man of Irish descent would have a wider view of the United Kingdom.
As a main theme of the ceremony are animals. Where are the Highland cows?  The Irish Setter?  The Welsh Dragon?
There is cricket being played, a quintessential English game. Where are the sports that represent the other Home Nations?  Such as Shinty, Tossing the Caber or for Wales, Rugby Football, Rugby Union.  Sorry Northern Ireland, I could not think of a national sport apart from Football.
